Honestly panzanella salad is one of my all-time favorites that I have on my rotation !! 🥒🍅💓🥕 It requires a bit of chopping but is sooo worth it. I use tons of veggies so once it’s made, it lasts all week. Here’s what I use:
〰️ mini seedless cucumbers, sliced rounds
〰️ cherry tomatoes, halved or quartered
〰️ red onion, thinly sliced
〰️ raw zucchini, small-ish chopped pieces
〰️ carrots, chopped rounds
〰️ snap peas, chopped
〰️ mozzarella, pearls or cut into pieces
〰️ basil, chopped
〰️ extra virgin olive oil
〰️ white balsamic vinegar
〰️ homemade croutons or crusty bread like french bread, ciabatta, or sourdough
〰️ mix everything together except for the bread which you’ll add right before serving. Sometimes I add a little bit of chunky sea salt or extra EVOO/white balsamic vin right before serving too!

Love these air fryer crunchy chickpeas for a quick healthy snack (Demi likes them too!)💕💥 Recipe:
• 1 can of garbanzo beans rinsed & dried
• in a bowl, drizzle olive oil over chickpeas
• add seasonings: salt, black pepper, garlic powder, onion powder, paprika
• air fry @ 400 deg for 15ish minutes (shake mid-way & don’t be afraid to keep them in longer than you think so they reallyyy crisp up)
• they’re best the same day but I keep them uncovered on the counter if I have any leftover

I loveeee me a bagel and these “protein bagels” did not disappoint !! 🤤🤤 I made half with jalapeño cheddar and the other half with EBTB seasoning (although it was the bottom of my shaker and I think all I had left in there was dried onions lol)
RECIPE:
• Preheat 350 deg & line a baking sheet with parchment paper
• 2 cups all purpose flour
• 2 cups 0% plain fage greek yogurt
• 2 tsp baking powder
• 1/4 tsp salt
• Mix dry ingredients then add greek yogurt
• Mix until combined (will probably need to use hands)
• Roll into a log & cut into 4 equal parts
• Add your stuffings at this point if you’re going to then form into bagel shapes
• Use 1 egg for egg wash
• Add toppings
• Bake for about 30 mins
