Honestly panzanella salad is one of my all-time favorites that I have on my rotation !! ๐ฅ๐
๐๐ฅ It requires a bit of chopping but is sooo worth it. I use tons of veggies so once itโs made, it lasts all week. Hereโs what I use:
ใฐ๏ธ mini seedless cucumbers, sliced rounds
ใฐ๏ธ cherry tomatoes, halved or quartered
ใฐ๏ธ red onion, thinly sliced
ใฐ๏ธ raw zucchini, small-ish chopped pieces
ใฐ๏ธ carrots, chopped rounds
ใฐ๏ธ snap peas, chopped
ใฐ๏ธ mozzarella, pearls or cut into pieces
ใฐ๏ธ basil, chopped
ใฐ๏ธ extra virgin olive oil
ใฐ๏ธ white balsamic vinegar
ใฐ๏ธ homemade croutons or crusty bread like french bread, ciabatta, or sourdough
ใฐ๏ธ mix everything together except for the bread which youโll add right before serving. Sometimes I add a little bit of chunky sea salt or extra EVOO/white balsamic vin right before serving too!
