I made this autumn kale salad for lunch the other day for something a little different. Anything with goat cheese, I’m game!
INGREDIENTS:
β’ chopped kale
β’ butternut squash
β’ whole pecans
β’ goat cheese
β’ blackberries
FOR DRESSING:
β’ olive oil
β’ balsamic vinegar
β’ honey or maple syrup
β’ dijon mustard
β’ s&p
HOW TO:
β’ cook frozen butternut squash in a pan
β’ whisk together 1 tbsp olive oil, 1 tbsp balsamic vinegar, 1 tsp dijon mustard, a splash of honey or maple syrup, and s&p
β’ massage kale in dressing (v important step with kale)
β’ top with butternut squash, pecans, goat cheese, and blackberries
