Autumn Kale Salad

I made this autumn kale salad for lunch the other day for something a little different. Anything with goat cheese, I’m game!

INGREDIENTS:
• chopped kale
• butternut squash
• whole pecans
• goat cheese
• blackberries

FOR DRESSING:
• olive oil
• balsamic vinegar
• honey or maple syrup
• dijon mustard
• s&p

HOW TO:
• cook frozen butternut squash in a pan
• whisk together 1 tbsp olive oil, 1 tbsp balsamic vinegar, 1 tsp dijon mustard, a splash of honey or maple syrup, and s&p
• massage kale in dressing (v important step with kale)
• top with butternut squash, pecans, goat cheese, and blackberries
