Skinni-Mini Banana Ice Cream

This sweet, guilt-free, & delicious recipe may or may not be a life-changing discovery. With this skinni-mini banana ice-cream, you can finally have your cake and eat it too. Really, you only need bananas and a food processor… but I jazzed my recipe up a lil’ with a few extras. Read on my peeps….

THE INGREDIENTS:

++ 2 ripe frozen bananas

++ a small scoop of PB or PB2

++ unsweetened coconut flakes

++ dark chocolate

++ fresh berries

++ sprinkles

Just freeze your bananas (takes a few hours), blend them until smooth in the processor, add PB if your heart desires, and top with fresh berries, coconut flakes, a drizzle of melted dark chocolate, & sprinkles for cuteness.

I just finished a heaping bowl of this with my mum & my gahdd is it good! I was even surprised with the end-result consistency. I just assumed a whizzed up frozen banana would be icy in texture… but NOPE, just creamy, gooey goodness in a bowl.

Double or triple the recipe to nestle away into your freezer for a rainy day.
