What is more fitting for the first day of fall than a pumpkin recipe?!
This waffle definitely doesn’t fall into my “skinni-mini” category but it was too damn good not to share. Let’s just go ahead and say yesterday was a cheat day for me. I lit-er-ally pregamed a dinner with my girlfriends with this waffle. I told myself I was only going to eat a quarter but that was a big old fail.
Waffle Batter Ingredients
(Yields: 4 waffles)
1.5 cups flour
3 teaspoons baking powder
1 teaspoon baking soda
3 teaspoons pumpkin pie spice
2 eggs (beaten)
1 cup pumpkin puree
1 & 2/3 cups milk
1/4 cup brown sugar
1 teaspoon vanilla
4 tablespoons melted butter
Cream Cheese Icing Ingredients
3 tablespoons of milk
3 tablespoons cream cheese
1 teaspoon vanilla
1 cup powdered sugar
Instructions
Combine flour & pumpkin pie spice in 1 bowl
Combine beaten eggs & brown sugar in another bowl
Add milk, pumpkin puree, vanilla, & butter to the eggs & brown sugar bowl
Slowly add dry ingredients to wet ingredients and stir until combined
Cook in waffle iron
For cream cheese icing, whisk all ingredients together until no lumps
I wish I could have tasted!!!
