I decided to take a little break from the blogging world for a week or so to just enjoy my birthday week. Yes, WEEK — I like to milk it when it comes to my birthday. Don’t you?!
The trip to the beach turned out to be SO much fun. I really couldn’t have asked for a better way to celebrate 26 than with 15 of my best friends. It was great to have my home friends, everyone’s boyfriends, and college friends all under one roof. AND I came home to a big family dinner with all of my favorite home-cooked meals. #happyheart ♡
So anyway — it’s been a while since I’ve posted a recipe on B&C. Today I’m sharing my mom’s 10 Minute Corn Salad. This was one of my favorites that she made for my birthday dinner. So if you like corn, this one is a real keeper.
INGREDIENTS
+ 2 bags of frozen corn
+ 1 small chopped red onion
+ 4 tablespoons apple cider vinegar
+ 3 tablespoons olive oil
+ 1/2 cup chopped basil
+ S&P
Cook corn according to bag directions, let cool (I pop it in the freezer while I prep), mix in the chopped onion, stir together apple cider vinegar, oil, S&P, toss the dressing, and stir in the chopped basil.
