I may or may not have waited my entire life to make this Pinterest recipe, guys.
I love me some sushi and when the craving hits, I’ve got to have it. But who has ever successfully (key word) made sushi rolls at home? I know there are kits that you can purchase but that just seems like too much effort. Plus, I would probably fail miserably.
So sushi lovers, here you go: spicy shrimp stacks that you can make at home (recipe courtesy of Skinnytaste)

INGREDIENTS
(makes about 4-5)
1 1/3 cups sticky rice
2 tbsp rice vinegar
8 oz. cooked shrimp, peeled and tails removed
1 cup diced cucumber
1 tsp chopped chives
1/2 cup mashed avocado
4 tsp Furikake
4 tsp mayo
1 tsp sriracha
soy sauce
DIRECTIONS
cook rice, add rice vinegar, stir, let cool
cut shrimp into 1 inch cubes
combine cucumber and chives in a bowl
combine mayo and sriracha in a separate bowl
using a 1 cup dry measuring cup, layer cucumber, avo, shrimp, and rice (in that order!)
turn the cup upside down
sprinkle with Furikake then drizzle spicy mayo and soy sauce
