Honestly panzanella salad is one of my all-time favorites that I have on my rotation !! π₯π
ππ₯ It requires a bit of chopping but is sooo worth it. I use tons of veggies so once itβs made, it lasts all week. Hereβs what I use:
γ°οΈ mini seedless cucumbers, sliced rounds
γ°οΈ cherry tomatoes, halved or quartered
γ°οΈ red onion, thinly sliced
γ°οΈ raw zucchini, small-ish chopped pieces
γ°οΈ carrots, chopped rounds
γ°οΈ snap peas, chopped
γ°οΈ mozzarella, pearls or cut into pieces
γ°οΈ basil, chopped
γ°οΈ extra virgin olive oil
γ°οΈ white balsamic vinegar
γ°οΈ homemade croutons or crusty bread like french bread, ciabatta, or sourdough
γ°οΈ mix everything together except for the bread which youβll add right before serving. Sometimes I add a little bit of chunky sea salt or extra EVOO/white balsamic vin right before serving too!
