Let’s give it up for healthy carbs. Sweet potatoes & whole wheat pasta, you are my saviors. Sweet potatoes are even considered “paleo-friendly” for anyone who thought differently. You can prepare them to be a sweet dish or a salty dish- which makes them such an awesome versatile ingredient. But in this case, I went with salty (shocker).
Point blank- I love snacking. I avoid buying snacks because if I know they are innocently sitting in my cabinet, they WILL haunt me and I WILL eat an entire box of cheezits. These sweet potater chips are the perfect snack for me- they are crunchy, salty, & basically kick every snack craving to the curb after I eat them.
I N G R E D I E N T S :
❤ sweet potato
❤ extra virgin olive oil
❤ Himalayan pink salt
❤ pepper
❤ optional seasoning inspo : rosemary / garlic powder / paprika / cinnamon
H O W T O :
❤ if you don’t have a mandolin, thinly slice your sweet potato – take your sweet time – the thinner, the crunchier
❤ line a non stick baking sheet with a single layer of sweet pot rounds
❤ lightly brush with EVOO
❤ sprinkle your seasonings of choice
❤ bake at 400 degrees for 15-20 minutes or until crispy

** tip: if the chips get soggy after sitting out, zap them in the microwave for 1 minute to crisp them up again**
Now let’s talk a little bit about Himalayan pink salt. So what’s the lowdown, you ask? Quite frankly, I didn’t even know when I bought it– I was just drawn to it because it was pink, pretty, and I simply assumed it was healthier. (don’t act like you’ve never impulse-purchased based on packaging & assumption).
So after using this pink salt dozens of times without knowing if it was better than other salts, I finally decided to research what I was putting into my body for this post:

+ “salt is what makes things taste bad when it isn’t in them”
+ table salt is BAD – it is highly refined & contains heavy amounts of “anti-caking” agents
+ Himalayan salt, sea salt, & Celtic salt are all better options than table salt
+ they have a lower sodium content than table salt & contain trace minerals
+ basically — always choose “natural salts” over table salt
