3 Ingredient Chia Seed Pudding

Chia seeds are an item in my pantry that I always totally forget about. Anyone else?? I’m never quite sure how I want to use them but what I do know is that this coconut chia seed pudding is delicious and super easy to whip together. You really only need a minimum of 2-3 ingredients to make the base and viola, you’ve got yourself some healthy pudding.

I’ve used unsweetened vanilla almond milk and coconut milk in this recipe but you can use whatever milk you prefer. Using a sweetener like maple syrup or honey is optional but I do prefer it with it than without it. As far as toppings go – get creative. You can go so many different ways. I’ve even seen some recipes that make a simple syrup in a saucepan beforehand which I definitely need to try. Full recipe below!

 

INGREDIENTS

MILK OF CHOICE (I’ve used unsweetened almond or coconut milk)

CHIA SEEDS

MAPLE SYRUP OR HONEY

TOPPINGS

HOW TO MAKE CHIA SEED PUDDING

1 TBSP chia seeds per 1/4 cup milk (so for 1 cup of milk you’re going to add 4 TBSP chia seeds etc.)

Pour your milk into a container (can make a larger batch or individual)

Add chia seeds

Stir

Add a little honey or maple syrup to sweeten (this can also be done at the end if you need more)

Pop in the refrigerator for 3+ hours or until thickened

Try to remember to stir sometime after the 1-2 hour mark

Add toppings when you’re ready to eat it
